Bell Pepper Salsa ~ Dirty Dish Club

Today is the official first day of spring and even though the weather forecast hasn’t seemed to take notice and is predicting snow this weekend, it makes me happy that some sort of authoritative entity has officially declared winter over. (My heart has been declaring the same thing for weeks now, but I apparently have less clout than the Vernal Equinox or a groundhog.) While I crave everything creamy and hearty during the winter, when spring and summer draw close I crave things that are fresh, light, and colorful and this bell pepper salsa is just that.

Bell Pepper and Cheese Salsa ~ Dirty Dish Club

I was first introduced to the idea of bell pepper salsa when a friend brought a similar dish to an exercise and healthy snacks church event over a year ago. While many of the power bars went untouched, ladies gathered around the salsa bowl elbowing each other to load up more chips. At one point one of the ladies said, “Is this still healthy even though it has cheese in it?” and someone else responded, “It doesn’t matter this is so good!”*  This isn’t a spicy salsa (which we are also fans of around here), which only means you’ll be able to tolerate more of it. There’s a nice contrast between the  crispness of the bell peppers and creaminess of the cheeses and it only gets better loaded on a good chip. The exact quantity of ingredients will vary depending on your personal taste so feel free to add or subtract a little of this or that to your liking, this was just the ratios that worked for me.

Bell Pepper Salsa

Ingredients

  • Red, yellow, and orange bell pepper, chopped
  • 2 Tomatoes, chopped (or a pint of cherry tomatoes. I used an heirloom cherry tomato melody in the version I photographed)
  • ~1/4 C Feta
  • ~1/4 C Mozzarella, cubed or shredded
  • Good Drizzle of Olive Oil
  • Salt and Pepper, to taste

Instructions

  1. Chop tomatoes and bell peppers. Mix together in a bowl.
  2. Add feta and mozzarella. Stir till combined.
  3. Drizzle with olive oil and mix until the whole salsa is evenly coated.
  4. Season with salt and pepper to taste.

*In case you were wondering, both mozzarella and feta are often touted as healthier cheeses and since we’d just worked out, salty chips were a must to replenish what we’d lost through sweating. I have a bit of a love affair with crunchy salty things and I use exercise to justify all of my indulgences. Noel uses exercise to justify eating half a pan of brownies.
