It’s been awhile since we’ve done one of these posts, but that’s not necessarily a bad thing since it forces me to share only the best recipes we’ve tried lately. The first one is for omnivores, but all the rest are solidly vegetarian (and even vegan in some instances).

Shrimp Boil Foil Packets

This was a delicious, easy, summery Cajun dish. We cooked ours on the grill.

Maple Mustard Tempeh Bowls

This recipe was not the fastest to put together, but it does have fun fall flavors. It was our first time using tempeh, I may sub tofu in the recipe in the future.

BBQ Jackfruit Sandwiches

It was a little difficult to find the jackfruit, but we finally found some at Whole Foods. (Sprouts supposedly sells it, but we were unable to find it at our local store.) It really was a pretty good dupe for pulled pork.

Sweet Potato and Green Rice Burrito Bowls

This was one of those dinners I made with trepidation. I was sure the kids would hate it and was worried it would be too healthy to be delicious. We were pleasantly surprised when everyone dug into their bowls and loved it. I think I will make rice like this all the time.

Apple Fritter Cake

This apple fritter cake from King Arthur flour was such a delicious fall treat. We highly recommend you make one while it is still fall.

Tempeh isn’t my favorite either, but I do have a recipe for shawarma that I like it in.

Jackfruit is the best! I absolutely love it as a Cafe Rio sweet pork substitute 😋 I get mine at Natural Grocers. (The first time I looked for it I asked an employee at Smith’s if they had some and they looked at me like I was speaking a foreign language haha)
