Agua Dulce Tea

A sweet gingery tea inspired by a trip to Costa Rica.

Ingredients

  • 2-4 TBSP Ginger root, roughly chopped We like a pretty strong ginger flavor, but if you want a more mild flavor start with 2 Tablespoons.
  • 1/3 C brown sugar You can add more later if it isn't sweet enough for you.
  • 6 C water
  • 1 cinnamon stick Can sub 1/2 tsp ground cinnamon
  • 1 lime, juice of optional

Instructions

  • Roughly chop your ginger. No need to peel it.
  • Add the ginger, brown sugar, cinnamon, and water to a large saucepan. Bring to a boil and then simmer for at least 10 minutes. Stir often until the sugar dissolves.
  • Use a mesh strainer to strain out the ginger and cinnamon stick. (If you don't have a mesh strainer you could also strain the mixture through a tea towel.)
  • Add a splash of lime juice if desired. You can add more brown sugar at this point if you prefer a sweeter tea.
