A sweet gingery tea inspired by a trip to Costa Rica.

Ingredients
2-4TBSP Ginger root, roughly choppedWe like a pretty strong ginger flavor, but if you want a more mild flavor start with 2 Tablespoons.
1/3Cbrown sugarYou can add more later if it isn't sweet enough for you.
6C water
1cinnamon stick Can sub 1/2 tsp ground cinnamon
1lime, juice ofoptional
Instructions
Roughly chop your ginger. No need to peel it.
Add the ginger, brown sugar, cinnamon, and water to a large saucepan. Bring to a boil and then simmer for at least 10 minutes. Stir often until the sugar dissolves.
Use a mesh strainer to strain out the ginger and cinnamon stick. (If you don't have a mesh strainer you could also strain the mixture through a tea towel.)
Add a splash of lime juice if desired. You can add more brown sugar at this point if you prefer a sweeter tea.
