Here’s what we ate this week:

Vegetarian Chili

I accidentally used our spicy chili powder at full strength in this vegetarian chili, so it was a tad bit spicy. The traditional ground beef is replaced by a carrot/mushroom/walnut “meat.” Noel said he preferred it to chili with ground beef. We served it with jalapeno cornbread (from How to Cook Everything) and pineapple.

Potato pancakes with fried egg and arugula

When we have leftover mashed potatoes, but nothing to go with them, I like to make potato pancakes. I usually wing the batter, but here’s a general recipe. I topped it with a fried egg and a handful of arugula. Served it with my favorite smoothie – cherry chocolate.

Loaded Broccoli Cheese Soup

I’m a huge fan of most broccoli cheese soups and this one did not disappoint. I chopped all the veggies except the broccoli in the food processor because I just wasn’t feeling like chopping everything by hand. Great news, that doesn’t change the flavor.

Blueberry Muffins with Streusel Topping

We got hit by a big snowstorm this last weekend and it seemed like the perfect time for more time intensive breakfasts like these muffins.

Agua Dulce Tea

It was also a great time for warm beverages like this agua dulce tea I recently shared.

Enchiladas with Corn and Zucchini

No recipe for this one. We just filled homemade tortillas with pinto beans, cheese, and enchilada sauce, then topped them with more cheese and enchilada sauce. Sauteed corn and zucchini is one of our favorite enchilada sides.

Dark Chocolate Pie with Marshmallow Meringue

Of course we celebrated pi day! This was another great recipe from Stella Parks BraveTart cookbook. The meringue got a bit toasty because I got distracted by our neighbors trying to ski down the street behind a jeep (true story), but it was still incredibly delicious.

Chicken Sausage and Veggie Stir Fry

We usually eat leftovers for lunch, but when we don’t this chicken sausage and veggie stir fry is part of our usual lunch rotation. Sometimes we serve it over rice, sometimes we top it with cheese, really whatever we’re feeling.

Taco Salad Bowls

Everyone was most excited about the bowls I made out of some leftover tortillas. A great hit for taco Tuesday.

Gumbo

I do a lot of improvisation when it comes to soups, but loosely followed this recipe for Gumbo. We also took some to a friend who had just had a baby.
