It’s about time I did another meal round-up. Here are some of the things we’ve eaten recently.

Pineapple Pork with Coconut Rice

Pinch of Yum is doing this awesome SOS Series – quick, easy meals for when life is overwhelming and this pineapple pork with coconut rice was one of the recipes. It was a total hit and will definitely be a repeat.

Impossible vs Beyond Burger

We took Impossible and Beyond Burgers head to head to see which we prefer. The verdict was: Impossible mimicked ground beef a little better, but Beyond still had a delightful flavor.

Bowtie Chicken Alredo

This bowtie chicken alfredo is part of our larger rotation. It is often a go-to when taking meals to people and pairs well with our favorite breadsticks.

Sweet Potato Tacos

I’ve known about sweet potato tacos for awhile, but have never been tempted to try them despite several recommendations. We finally gave this recipe a try and found it quite delightful.

Meatloaf

Our carnivorous child (Cooper) has been begging to have meatloaf for ages. Neither Noel nor I are terribly fond of this dish, but I knew we couldn’t put it off any longer. I half hoped Cooper would realize meatloaf isn’t that great, but he totally loved it. I made half of this recipe.

Spicy Vegetarian Ramen

This spicy ramen did not photograph great, but was pretty good. We opted to use a technique on the eggs we learned from Mark Bittman in How to Cook Everything Fast instead of soft boiling eggs. You just scramble some eggs, then pour into the simmering soup and stir.

Cajun Grilled Shrimp

This was another super easy recipe. Sprinkle shrimp with cajun seasoning. Grill. Done.

Pistachio Ice Cream

If you’re a pistachio lover, this ice cream is a good one. My son and I made this on a mother and son date.

Creamy Chicken Noodle Soup

We made this soup the day we got our second Pfizer shots in case we weren’t feeling great. (Yay for vaccines!!!!) It’s a comforting favorite at our house.

Impossible Tacos

No recipe, just subbed impossible “meat” for ground beef on this taco Tuesday. It really does do a pretty good imitation.
